Quinoa use is getting more and more popular each day amongst health-conscious consumers. With its high protein levels and antioxidant properties, it is considered as one of the best superfoods. New recipes arise every day. Here are 5 delicious baking recipes you can easily make!
1. Quinoa and Oatmeal cookies with dried fruits
Ingredients:
1 ripe banana
1 egg
1 teaspoon vanilla extract
½ cup cooked quinoa
1 cup oatmeal
¼ cup mixed dried fruits (raisins, apricots, figs etc…)
Pinch of salt
Preparation:
Combine and mix all the ingredients using a blender. Make small balls and place them on a greased trey and cook 12 to 15 min in a 175 ° C preheated oven.

2. Cheesy Quinoa Bites
Ingredients:
1 cup cooked quinoa
1 egg
1 cup shredded cheese mix (cheddar, mozzarella etc.)
5 tablespoon parmigiana cheese
1 cup shredded carrot
Pinch of salt
Greens to taste: spring onions, dill, parsley etc.
Preparation:
Combine all the ingredients together and shape nut size balls and place them in greaed trey and bake 25 to 35 minute in a 200 ° C preheated oven.

3. Chocolate Quinoa Cake
Ingredients
2 eggs
5 tablespoons canola oil
1 cup quinoa
½ cup (100 grams) granulated sugar
7 tablespoons (50 grams) cocoa powder (if using unsweetened you may increase the sugar amount)
1 teaspoon of vanilla extract
1 teaspoon of baking powder
Pinch of salt
Preparation:
Mix eggs, quinoa and canola oil in a food processor. Combine all the dry ingredients (sugar, cocoa powder, baking powder) and add them into the processor and mix well. Pour the mixture in a cake mold and bake for 45 minutes in a 190 ° C preheated oven.

4. Quinoa Tart Crust
Ingredients:
2 cups (350 gr) of cooked quinoa
1 egg
Pinch of salt
Preparation:
Combine all the ingredients together and place it in a tart mold patting the mixtures with a fork. Bake for 20 minutes in a 190 ° C preheated oven.

3 tablespoon (30 gr) of flaxseed (finely ground)

1 tablespoon olive oil
